Fast Beef Massaman Curry Recipe

Ingredients

1 tablespoon (15ml) cooking oil
500g (1 lb 1 oz) lean beef, cut into 6mm (1/4 inch) strips with the strips no longer than 7.5cm (3 inches)
2 tablespoons (30ml) massaman curry paste
1 tin/can (400g or 14 fl oz) coconut milk
115g (4 oz) potatoes, peeled and cut into 1cm (1/2 inch) cubes
1 teaspoon (5ml) fish sauce
2 teaspoons (10ml) sugar
1 tablespoon (15ml) lime juice
1 teaspoon (5ml) salt
115g (4 oz) green (string/French) beans, washed and cut into 2.5cm (1 inch) pieces
3 tablespoons (45ml) finely chopped fresh coriander leaves


Method

Heat the cooking oil in a large saucepan over a medium to high heat
Add the beef strips and stir-fry until the beef is browned (3 to 6 minutes) then tip the beef onto a small plate and set aside
Add the curry paste to the saucepan and stir-fry for 1 minute
Add the coconut milk, mix well, bring to a good simmer
Add the potatoes and mix well
Add the fish sauce, sugar, lime juice and salt and then mix well
Bring the curry back to a simmer (if the simmer has stopped) and cook for 10 minutes, stirring every 2 minutes
Add the beans and mix well
Bring back to a simmer and simmer until the beans and potatoes are fully cooked (2-6 minutes), stirring every 2 minutes
Serve hot on rice
