Green Bean Curry Recipe

Ingredients

1 tablespoon (15ml) vegetable cooking oil
1/2 teaspoon (2.5ml) cumin seeds
1/2 teaspoon (2.5ml) yellow mustard seeds
5 curry leaves
2 dried red chillies
500g (1 lb 1 oz) green (French/string) beans, washed and cut into 2.5cm (1 inch) pieces
1 teaspoon (5ml) salt


Method

Heat the vegetable cooking oil in a medium sized heavy-bottomed saucepan over a medium heat
Add the cumin seeds, yellow mustard seeds, curry leaves and dried red chillies, mix well and stir-fry for 2 minutes
Add the green (French/string) beans and mix well
Sprinkle in the salt, mix well and cook for 10 minutes, stirring often
Serve hot as a side dish
