Aloo Jeera (version 2) Recipe

Ingredients

3 large potatoes, peeled and cut into 1cm (1/2 inch) cubes
1 teaspoon (5ml) salt
2 tablespoons (30ml) vegetable cooking oil
1 tablespoon (15ml) cumin seeds
1 teaspoon (5ml) asafoetida
2.5cm (1 inch) cube fresh ginger root, peeled and grated
2 fresh green chillies, finely chopped
4 teaspoons (20ml) ground coriander
1 teaspoon (5ml) ground turmeric
1 teaspoon (5ml) chilli powder
2 teaspoons (10ml) lemon juice


Method

Put the potato cubes into a medium to large heavy-bottomed saucepan, cover with cold water, sprinkle in the teaspoon of salt, bring the water to a good simmer, adjust the heat to maintain the simmer, cover, simmer until the potato is cooked (8-12 minutes) and then drain and set aside the cooked potato
Heat the cooking oil in a large heavy-bottomed saucepan over a medium heat
Add the cumin seeds and stir-fry for 90 seconds
Add the asafoetida, fresh ginger root and fresh green chillies, mix well and saute for 3 minutes, turning often
Add the ground coriander, ground turmeric, chilli powder and lemon juice and then mix well
Add the potato cubes that you cooked and mix well so that all of the potato cubes are coated
Saute for 5 minutes, stirring often so that the ingredients do not stick to the saucepan
Serve hot
