Spicy Fish Curry Recipe - Serves 4-6

Ingredients
5 tablespoons (75ml) vegetable oil
3 medium onions, peeled and finely chopped
1 teaspoon (5ml) salt
2.5cm (1 inch) cube of fresh ginger root, grated
4 cloves of garlic, peeled and crushed
4 finely chopped tomatoes
1 teaspoon (5ml) ground coriander
1/2 teaspoon (2.5ml) ground aniseed
1/2 teaspoon (2.5ml) ground turmeric
1/2 teaspoon (2.5ml) chilli powder
1/2 teaspooon (2.5ml) garam masala
1 cup (250ml or 1/2 pint) hot water
1/2 cup (125g) plain yoghurt
750g (1 1/2 lb) white fish fillets, rinsed, dried and then cut into serving sized portions
1 tablespoon (15ml) fresh mint, finely chopped
1 tablespoon (15ml fresh coriander (cilantro), finely chopped
Method
Heat the oil in a large frying pan or saucepan over a medium heat
Add the onions and salt and cook until the onions are golden (12-14 minutes), stirring occasionally (you do not want the onions to start turning brown)
Add the ginger and garlic, mix well and cook for another 2 minutes, stirring continuously
Add the tomatoes, ground coriander, aniseed, turmeric, chilli powder and garam masala and mix well
Bring to a simmer and simmer for 2 minutes
Stir in the water and yoghurt and bring back to a simmer
Add the fish to the frying pan or saucepan
Spoon the sauce over the fish
Cook uncovered for 10 minutes, turning once, until the fish is cooked
Serve and sprinkle with the mint and coriander (cilantro)
