Easy Chicken Bhuna Curry Recipe

3 tablespoons (45ml) cooking oil
2 medium onions, peeled and finely chopped
3 cloves of garlic, peeled and crushed
2.5cm (1 inch) cube fresh ginger root, peeled and grated
2 fresh green chillies, finely chopped
2 teaspoons (10ml) ground cumin
2 teaspoons (10ml) ground coriander
1 teaspoon (5ml) garam masala
1/2 teaspoon (2.5ml) ground turmeric
680g (1 lb 8 oz) boneless and skinless chicken breast, cut into 19mm (3/4 inch) cubes
1 tin/can (400g or 14 oz) chopped tomatoes
2 tablespoons (30ml) lemon juice
1 teaspoon (5ml) salt


Heat the cooking oil in a large saucepan (or frying pan) over a medium heat
Add the onions and saute until cooked and soft (5-12 minutes), turning often
Add the garlic, fresh ginger, fresh green chillies, ground cumin, ground coriander, garam masala and ground turmeric, mix well and cook for 2 minutes, stirring often
Add the chicken, mix well and cook for 10 minutes, stirring often
Add the chopped tomatoes, lemon juice and salt, mix well, bring to a good simmer, adjust the heat to maintain the simmer, cover and simmer for 10 minutes, stirring every few minutes
Remove the lid and continue cooking for 10 more minutes, stirring a couple of times (turn up the heat if the sauce is too runny for you and add a little hot water if the curry is too dry)
Serve hot
