Beef Massaman Curry (version 2) Recipe

910g (2 lb) lean beef, cut into 19mm (3/4 inch) cubes
120g (4 oz) Thai yellow curry paste
2 tablespoons (30ml) cooking oil
7.5cm (3 inches) cinnamon stick
1 star anise
3 green cardamom pods, lightly crushed
1 large onion, peeled and coarsely chopped (into about 1cm or 1/2 inch cubes)
1 cup (250ml or 9 fl oz) beef stock
1 tin/can (400g or 14 oz) coconut milk
2 large potatoes, peeled and cut into 1cm (1/2 inch) cubes
2 tablespoons (30ml) fish sauce
1 tablespoon (15ml) raw sugar
30g (1 oz) unsalted peanuts, lightly crushed
1 teaspoon (5ml) salt


Put the beef cubes into a large bowl, add the Thai yellow curry paste, mix well and set aside
Heat the cooking oil in a large heavy-bottomed saucepan (you need one with a lid) over a medium heat
Add the cinnamon stick, star anise and green cardamom pods, mix well and fry for 3 minutes, stirring every half minute
Add the onion, mix well and cook for 5 minutes, stirring every minute
Increase the heat to high, add the beef cubes (and all of the yellow curry paste), mix well and cook for 2 minutes, stirring once
Add the beef stock and coconut milk, mix well, bring to a good simmer, reduce the heat to maintain the simmer, cover and cook for 90 minutes, stirring every 10 minutes
Add the potatoes, fish sauce, raw sugar, peanuts and salt, mix well, cover and cook until the potatoes are tender (about 30 minutes), stirring every few minutes
Serve hot on rice
