Matar Pulao Recipe

2 tablespoons (30ml) vegetable oil
3 cloves
2 black cardamom pods
5 peppercorns
7.5cm (3 inches) cinnamon stick
2 teaspoons (10ml) garlic paste
115g (4 oz) frozen peas, thawed
1L (35 fl oz) cold water
400g (14 oz) basmati rice, rinsed well with cold water
1/2 teaspoon (2.5ml) salt


Heat the oil in a large heavy-bottomed frying pan or saucepan (you need one with a lid) over a medium heat
Add the cloves, black cardamom pods, peppercorns and cinnamon stick and fry for 4 minutes, stirring every minute or so
Carefully add the garlic paste and peas, mix well, cover and cook for 5 minutes, stirring often (care is needed when adding the garlic paste because it has water in it and this can cause the hot oil to splatter)
Add the water, basmati rice and salt, mix well, bring to the boil, adjust the heat to maintain a simmer, cover and simmer for 15 minutes (without removing the lid and without stirring)
Make sure that the basmati is cooked
Serve hot
