South African Beef Bobotie Curry With Apricots Recipe

Ingredients

2 slices of bread
2 tablespoons (30ml) cooking oil
1 large onion, peeled and finely chopped
2 cloves of garlic, peeled and crushed
2.5cm (1 inch) cube fresh ginger root, peeled and grated
1 teaspoon (5ml) mild curry powder
1/2 teaspoon (2.5ml) ground turmeric
1/2 teaspoon (2.5ml) ground coriander
1/2 teaspoon (2.5ml) ground cumin
680g (1 lb 8 oz) minced (ground) beef
1/2 teaspoon (2.5ml) salt
1 tablespoon (5ml) lemon juice
2 tablespoons (30ml) mango chutney
2 tablespoons (30ml) tomato paste/puree
85g (3 oz) dried apricots, finely chopped
3 bay leaves
1/4 teaspoon (1ml) salt
2 eggs
1 cup (250ml or 9 fl oz) milk


Method

Rip the bread into small pieces, put into a small bowl, cover with water and set aside
Heat the cooking oil in a medium to large saucepan over a medium heat
Add the onion, garlic and ginger, mix well and saute until the onion is soft and cooked but not browned (5-9 minutes)
Add the curry powder, ground turmeric, ground coriander and ground cumin, mix well and stir-fry for 1 minute (the ingredients will get very dry)
Add the beef and 1/2 teaspoon of salt, mix well and fry until the beef is lightly browned (4-7 minutes), stirring often
Squeeze out, and discard as much water as you can from the soaking bread
Add the bread, lemon juice, mango chutney, tomato paste/puree, dried apricots and bay leaves, mix well, bring to a simmer, cover and simmer for 25 minutes, sitting every few minutes (add a little hot water if the ingredients become too dry)
Tip the cooked ingredients into an ovenproof dish and set aside
Preheat the oven to 180C (350F)
Whilst the oven is heating up, crack the eggs into a medium mixing bowl, add the milk and 1/4 teaspoon of salt and mix well
Gently pour the egg and milk mixture over the top of the ingredients in the ovenproof dish (do not mix because the egg and milk mixture is the topping for the bobotie)
Once the oven is heated, bake the bobotie for 40 minutes
Serve hot
