Beef and Potato Curry Recipe - Serves 4

Ingredients
1kg (2 lb) boneless stewing beef, chopped into bite-sized cubes
1/2 teaspoon (2.5ml) salt
1 teaspoon (5ml) turmeric
9 tablespoons (135ml) vegetable oil
2 finely chopped medium onions
5 cloves of garlic, crushed into a paste
1 teaspoon (5ml) grated fresh ginger
4 tablespoons (60ml) cumin
1 tablespoon (15ml) coriander
1 tablespoon (15ml) paprika
1 teaspoon (5ml) cayenne pepper
1 teaspoon (5ml) cardamon pods
1L (2 pints) water
4 peeled medium potatoes, cut into quarters
Method
Mix the beef, salt and tumeric in a bowl
Heat the oil in a pan on medium heat
Add the onion, garlic and ginger and stir-fry for 8-10 minutes until the onion is cooked
Add the beef mix and the spices and stir-fry for 5 minutes
Add the water, cover and simmer for 2 hours until the beef is tender
Add the potatoes and simmer for another 20 minutes
Serve hot
