Balti Vegetables (version 1) Recipe

1 tablespoon (15ml) vegetable oil
1/2 teaspoon (2.5ml) cumin seeds
4 curry leaves
3 dried red chillies
2 medium carrots, peeled and finely chopped
1 medium red bell pepper (capsicum), cored and finely chopped
1 medium green bell pepper (capsicum), cored and finely chopped
2 courgettes, finely chopped
3 spring (green) onions, topped and tailed and finely chopped
115g (4 oz) cauliflower florets
1 teaspoon (5ml) salt
2 tablespoons (30ml) lemon juice


Heat the oil in a large heavy-bottomed karahi or frying pan over a medium heat
Add the cumin seeds, curry leaves and dried red chillies and stir-fry for 1 minute
Add the carrots, bell peppers (capsicums), courgettes, spring onions and cauliflower, mix well and gently stir for 2 minutes
Sprinkle over the salt, add the lemon juice, mix well and cook for 9 minutes, stirring often
Serve hot
