Chicken Curry (version 1) Recipe

2 tablespoons (30ml) oil
500g (1 lb 1 oz) chicken breasts, cut into small cubes
1 large finely chopped onion
1 green bell pepper (capsicum), with the seeds discarded and chopped into small pieces
1 tin/can (400g or 14 oz) chopped tomatoes
1 teaspoon (5ml) curry powder
1 finely chopped green chilli
1 tablespoon (15ml) plain flour


Heat the oil over hot heat
Fry the onion until golden brown
Spoon the onion into a medium sized pan
Add the capsicum and tomatoes (including the juice), to the pan
Add chicken pieces to pan and then add enough water to cover the chicken
Add the chilli and curry powder and mix in well
Bring the mixture to the boil and then turn down the heat to simmer
Simmer for 30 minutes
Stir in the flour to thicken
Serve on rice with naan bread
