Chilli Sambal Recipe - Makes 170ml (6 fl oz)

Chilli Sambal Recipe

2 fresh green chillies, coarsely chopped
2 fresh red chillies, coarsely chopped
1 spring onion (green onion/scallion), topped and tailed and coarsely chopped
2 teaspoons (10ml) sugar
1/2 teaspoon (2.5ml) salt
1 tablespoon (15ml) finely chopped fresh coriander (cilantro)
2 tablespoons (30ml) white vinegar


Put all of the ingredients into a food processor and blend into a coarse paste (you do not want the paste to be too smooth)
Put into a bowl, cover with kitchen film and put into the fridge for an hour to chill a little
