Oven Cooked Chicken Vindaloo Curry Recipe

Ingredients

8 chicken drumsticks, skinless
3 tablespoons (45ml) cooking oil
3 medium onions, peeled and finely chopped
4 cloves of garlic, peeled and crushed
2 tablespoons (30ml) hot curry paste
1/2 teaspoon (2.5ml) salt
1 tablespoon (15ml) tomato paste/puree
2 cups (500ml or 17 fl oz) boiling water
30g (1 oz) unsalted butter


Method

Preheat the oven to 200C (400F)
Wash the chicken drumsticks, dry with kitchen paper, evenly score with a sharp knife 5 or 6 times and set aside
Heat the oil in a large heavy bottomed saucepan or frying pan over a medium heat
Add the chicken drumsticks, onions and garlic, mix well and saute until the onion is soft and golden (8-18 minutes), turning often
Add the curry paste and salt, mix well and saute for 2 minutes, turning a few times
Add the tomato paste/puree and boiling water and mix well
Add the butter and mix in until melted
Put all of the ingredients into a large casserole, cover with kitchen foil, put the casserole into the middle of the oven and cook for 50 minutes
Serve hot
