Balti Beef and Mushroom Curry Recipe

Ingredients

2 tablespoons (30ml) cooking oil
250g lean beef, cut into thin (6mm or 1/4 inch) strips
2 cloves of garlic, peeled and crushed
1 medium onion, peeled and then cut in half and finely sliced
4 large button mushrooms, wiped with damp kitchen paper and then destalked and thinly sliced
1 tablespoon (15ml) Balti curry paste
1/2 teaspoon (2.5ml) cumin seeds
4 tablespoons (60ml or 2 fl oz) water
4 tablespoons (60ml or 2 fl oz) Greek yoghurt
1/2 teaspoon (2.5ml) salt


Method

Heat the cooking oil in a medium heavy-bottomed frying pan over a medium to high heat
Add the beef and garlic, stir-fry for 3 minutes then remove the beef from the frying pan and set aside
Add the onion to the frying pan and stir-fry for 3 minutes
Add the mushrooms, mix well and stir-fry for 3 minutes
Add the previously cooked beef along with the curry paste and cumin seeds, mix well and stir-fry for 1 minute
Add the water, yoghurt and salt, mix well, bring to a good simmer, reduce the heat to maintain the simmer and simmer until most of the liquid has gone (3-5 minutes), stirring often
Serve hot
