Chicken Curry (Kodi Kura) (version 1) Recipe

2 teaspoons (10ml) ginger paste
2 teaspoons (10ml) garlic paste
2 teaspoons (10ml) chilli powder
1 teaspoon (5ml) turmeric
750g (1 lb 10 oz) boneless and skinless chicken breast, cut into bite-sized pieces
2 tablespoons (30ml) cooking oil
20 curry leaves
2 medium onions, finely chopped
4 teaspoons (20ml) garam masala powder
375ml (13 fl oz or 1 1/2 cups) water
1 teaspoon (5ml) salt (optional)
2 tablespoons (30ml) fresh coriander (cilantro), finely chopped


Mix the chilli powder, ginger paste, garlic paste and turmeric into a smooth paste
Put the chicken into a bowl and mix well with the paste
Cover the bowl with plastic film and leave to marinate for 4 hours in the fridge, stirring every hour
Heat the oil in a large non-stick pan
Add the curry leaves and fry for 30 seconds
Add the onions and fry until a light brown colour
Add the chicken, and the marinade, and fry until chicken looses it's pink colour
Add the garam masla and fry for 1 minute
Add the water, bring to the boil and then turn heat down to simmer
Simmer for 10 minutes, stirring occasionally
Add the salt, if you're going to add salt
Add the fresh corainder
Mix well
Cook until the chicken is cooked through
Serve hot, on rice
