Beef Madras Curry (version 2) Recipe

2 teaspoons (10ml) curry powder
2 teaspoons (10ml) chilli powder
5 tablespoons (75ml) vegetable oil
1 medium onion, peeled and finely chopped
4 cloves garlic, peeled and crushed
5cm (2 inches) fresh ginger root, peeled and grated
2 finely chopped red chillies
450g (1 lb) lean beef steak, cut into bite-sized pieces
2 tablespoons (30ml) garam masala, mixed with 1 cup (250ml or 9 fl oz) water to make a gravy
4 tablespoons (60ml) roughly chopped fresh coriander
1 tablespoon (15ml) fresh coriander leaves, whole


Make a slightly runny paste of the curry powder and chilli powder with a little water and set the paste aside
Heat the oil in a frying pan over a medium heat
Stir-fry the onion for 8-10 minutes until it is cooked
Add the garlic, ginger and chillies and stir-fry on medium heat for a further 5 minutes
Add the curry and chilli powder paste (that you made earlier) and stir in and fry for a further 30 secs
Add the beef pieces and stir-fry for 2 minutes
Add half of the garam masala gravy and simmer for 20 minutes, or until the beef is cooked, stirring often. If needed, add more of the garam masala gravy to prevent the curry becoming too thick or dry (if the curry is still too dry then add some boiling water)
Add the finely chopped fresh coriander and cook for a further minute
Serve on rice and garnish with the whole fresh coriander leaves
