Simple Pork Sausage, Potato and Pea Curry Recipe

2 medium potatoes, peeled and cut into 1cm (1/2 inch) cubes
600g (1 lb 5 oz) pork sausages
3 tablespoons (45ml) vegetable oil
1 large onion, peeled and coarsely chopped
2 garlic cloves, peeled and finely chopped
4 teaspoons (20ml) curry powder
1 tin/can (400g or 14 oz) chopped tomatoes
1 cup (250ml or 9 fl oz) water
1 teaspoon (5ml) salt
115g (4 oz) frozen peas, thawed


Parboil the potatoes by boiling a saucepan of water, adding the potato cubes, bringing back to the boil, reducing the heat a little, lightly boiling for 5 minutes, draining and setting the parboiled potatoes aside
Cook the sausages (whatever way you want), let them cool, slice into 1cm (1/2 inch) pieces and set aside
Heat the oil in a large frying pan over a medium heat
Fry the onions and garlic for 5-10 minutes until the onions are cooked but not browned, stirring often
Add the curry powder and stir-fry for 30 seconds
Add the sausage slices, mix well and fry for 1 minute, stirring a couple of times
Add the chopped tomatoes and mix well
Add the water and salt and mix well (this is a dry curry so only add more water if the ingredients get too dry)
Bring the ingredients to the boil, reduce the heat to maintain a good simmer and simmer for 10 minutes, stirring now and again
Add the potatoes and peas, mix well, bring back to a good simmer and simmer for 5 minutes
Serve hot on rice
