Rice With Peas Recipe - Serves 6
Ingredients
425g (1 lb) long grain rice
4 tablespoons (60ml) vegetable oil
1 teaspoon (5ml) whole cumin seeds
1 small onion, finely chopped
175g (6 oz) fresh peas (defrosted frozen peas can be substituted)
1 teaspoon (5ml) salt
2 1/4 cups (565ml) water
Method
Put rice into a strainer
Wash several times in cold water
Drain rice
Put rice in bowl
Add 4 cups (1L or 2 pints) of water and soak for an hour
Drain and set aside
Heat the oil in heavy pan over medium heat
When oil is hot put in cumin seeds
Stir for 3 seconds
Put in the chopped onion and stir-fry until onion is cooked and a golden colour
Add the peas, rice and salt
Stir gently for 2 minutes until the peas and rice are coated with oil
Add the 2 1/4 cups of water and bring to the boil
Cover tightly, turn heat to very low and cook for 25 minutes
Turn off heat and let pan sit for another 5 minutes (do not remove lid)
Stir gently and serve
