Coronation Chicken (version 3) Recipe - Serves 6-8
 
Ingredients
1/2 cup (120g or 4 oz) mayonnaise
1 tablespoon (15ml) curry powder
1 tablespoon (15ml) vinegar
2 tablespoons (30ml) mango chutney
2 tablespoons (30ml) lemon juice
1/2 teaspoon (2.5ml) salt
4 precooked boneless and skinless chicken breasts, shredded or cut into 1cm (1/2 inch) pieces
1 small onion, peeled and finely chopped
1 stalk of celery, topped and tailed and finely chopped
1/4 cup (150g or 5 oz) currants
Method
Add the mayonnaise, curry powder, vinegar, mango chutney, lemon juice and salt to a large bowl and mix well
Add the chicken, onion, celery and currants and mix well
Cover with kitchen film and put in fridge for at least 4 hours
Serve cold on lettuce or as sandwich filling
