Leftover Ham Curry Recipe

Ingredients

1 tablespoon (15ml) cooking oil
1 tablespoon (15ml) curry powder
340g (12 oz) precooked leftover ham, cut into 1cm (1/2 inch) cubes
4 spring onions (scallions or green onions), topped and tailed and finely chopped
1 tin/can (400g or 14 oz) chopped tomatoes
1 stalk of lemongrass, topped and tailed and chopped into 2.5cm (1 inch) pieces and crushed. You want about 6 or 7 pieces of lemongrass. Crushing the lemongrass is difficult because it is so tough but a light crushing is all you really need (use the back of a spatula to do the crushing)
2 tablespoons (30ml) fresh coriander (cilantro) leaves, finely chopped


Method

Heat the oil in a medium heavy-bottomed frying pan or saucepan over a medium heat
Add the curry powder and fry for 90 seconds, stirring often
Add the leftover ham and spring onions (scallions or green onions), mix well and fry for 3 minutes, stirring often (the ingredients get dry so make sure they do not stick and burn)
Add the chopped tomatoes, lemon grass and coriander (cilantro), mix well, bring to a good simmer and simmer for 15 minutes, stirring now and again (add a little hot water if the curry becomes too dry)
Serve hot on rice, picking out and discarding the lemongrass
