Balti Chicken Pasanda Curry Recipe

Ingredients

1/4 cup (60ml or 2 fl oz) unsweetened natural yogurt
1/2 teaspoon (2.5ml) cumin seeds
4 green cardamom pods, lightly crushed
6 black peppercorns
2 teaspoons (10ml) garam masala
2.5cm (1 inch) cinnamon stick
1 tablespoon (15ml) ground almonds
3 cloves of garlic, peeled and crushed
1cm (1/2 inch) piece of fresh ginger root, peeled and grated
1 teaspoon (5ml) chilli powder
1 teaspoon (5ml) salt
675g (1 1/2 lb) boneless and skinless chicken breast, cut into 1cm (1/2 inch) cubes
3 tablespoons (45ml) cooking oil
2 medium onions, peeled and finely chopped
3 fresh green chillies, finely chopped
2 tablespoons (30ml) finely chopped fresh coriander (cilantro) leaves


Method

Put the yogurt, cumin seeds, cardamom pods, peppercorns, garam masala, cinnamon stick, ground almonds, garlic, ginger, chilli powder and salt in a large bowl and mix well
Add the chicken cubes, mix well, cover with kitchen film and leave to marinate for 3 hours
Heat the cooking oil in a large saucepan or frying pan over a medium heat
Add the chopped onions and fry for 3 minutes, stirring often
Add the marinated chicken (and the marinade) and mix well
Cook for 15 minutes, stirring often
Make sure that the chicken is cooked and then add the fresh chillies and chopped coriander (cilantro) and mix well
Serve hot
