Goat Curry (version 2) Recipe

Ingredients

1KG (2 lb 4 oz) lean goat meat, cut into 2cm (3/4 inch) cubes
1 medium onion, peeled and finely chopped
5 scallions (green/spring onions), topped and tailed and then finely chopped
3 fresh green chillies, finely chopped
2 tablespoons fresh lime juice
5 cloves of garlic, peeled and crushed
2.5cm (1 inch) piece of fresh ginger root, peeled and grated
2 teaspoons (10ml) fresh thyme
1/2 teaspoon (2.5ml) salt
4 tablespoons (60ml) cooking oil
2 tablespoons (30ml) curry powder
375ml (13 fl oz) cold water
3 medium carrots, peeled and sliced into 0.5cm (1/4 inch) pieces
3 medium potatoes, peeled and cut into 1cm (1/2 inch) cubes


Method

Mix the goat meat, onion, scallions, chillies , lime juice, garlic, ginger, thyme and salt in a large bowl, cover with kitchen film and put into the fridge overnight
When ready to cook the curry the next day, separate the goat meat from the marinade ingredients (keep the marinade ingredients)
Heat the oil in a large heavy-bottomed saucepan (you need one with a lid) over a medium to high heat
Add the goat meat to the saucepan and brown (seal) it (2-4 minutes), stirring often (you may need to brown/seal the meat in batches) and remove the meat from the saucepan once it is browned (sealed) and set aside
Add the curry powder to the oil, mix well and cook for 30 seconds, stirring all the time
Add the marinade that you kept back, mix well and saute for 4 minutes, turning often
Add the goat meat back into the saucepan along with the water, mix well, bring to the boil, reduce the heat to a simmer, cover and simmer for 60 minutes, stirring now and again
Add the carrots and potatoes, mix well, bring to the boil, adjust the heat to maintain a simmer, cover and simmer for 45 minutes, stirring every 10 minutes or so (add more water if the curry becomes too dry)
Serve hot on rice
