Chilli Beef Recipe - Serves 6

Chilli Beef Recipe

2 tablespoons (30ml) cooking oil
1 large onion, peeled and finely chopped
1 green bell pepper (capsicum)
3 cloves of garlic, peeled and crushed
2 teaspoons (10ml) chilli powder
2 teaspoons (10ml) ground cumin
1KG (2 lb 4 oz) lean beef steak, cut into 1cm (1/2 inch) cubes
2 tins/cans (800g or 28 oz) chopped tomatoes
1 cup (250ml or 9 fl oz) beef stock
1 tin/can (400g or 14 oz) red kidney beans, drained


Heat the oil in a large frying pan or saucepan (you need one with a lid) over a medium heat
Add the onion, bell pepper (capsicum) and garlic and saute until the onion is soft and golden (8-10 minutes) turning often
Add the chilli powder and cumin, mix well and fry for 2 minutes, stirring all the time
Add the beef cubes, mix well and cook until the beef is browned (4-6 minutes) turning the beef often
Add the chopped tomatoes and beef stock, mix well and bring to a gentle simmer
Simmer for 90 minutes, stirring now and again
Add the kidney beans, mix well, cover and cook for 30 minutes, stirring every few minutes
Serve hot on rice
