Potato and Spinach Curry Recipe - Serves 4

Ingredients
2 large potatoes, peeled and cut into 9mm (3/4 inch) cubes
2 tablespoons (30ml) vegetable oil
1/2 teaspoon (2.5ml) black mustard seeds
1/2 teaspoon (2.5ml) cumin seeds
1 medium onion, peeled and finely chopped
6 curry leaves
1/4 teaspoon (1ml) ground turmeric
1/2 teaspoon (2.5ml) chilli powder
1/2 teaspoon (2.5ml) salt
2 cups (140g or 5 oz) coarsely chopped spinach leaves
Method
Add the potato cubes to a medium saucepan of boiling water, bring back to the boil, boil until the potatoes are cooked (7-10 minutes), drain and set aside
Heat the vegetable oil in a medium frying pan or saucepan over a medium heat
Add the mustard seeds and fry for 90 seconds, stirring a couple of times
Add the cumin seeds and fry for 90 seconds, stirring a couple of times
Add the onion and curry leaves, mix well and saute until the onion is cooked but before it turns brown (7-9 minutes)
Add the precooked potato cubes and mix well
Add the turmeric, chilli powder and salt, mix well and cook for 5 minutes, stirring often (add a little hot water if the curry becomes too dry and sticks)
Add the spinach leaves, mix well and cook for 2 minutes, stirring often (add a little hot water if the curry becomes too dry and sticks)
Serve hot on rice
