Mushroom Curry (version 3) Recipe

Ingredients

450g (1 lb) button mushrooms, with stalks removed
2 fresh green chillies, coarsely chopped
2 teaspoons (10ml) ground coriander (cilantro)
1 teaspoon (5ml) ground cumin
1/2 teaspoon (2.5ml) chilli powder
2 garlic cloves, peeled and coarsely chopped
1 medium onion, peeled and coarsely chopped
1 cup (250ml or 8 fl oz) coconut milk
1/2 teaspoon (2.5ml) salt
2 tablespoons (30ml) vegetable oil
1 tablespoon fresh coriander (cilantro), finely chopped


Method

Clean the mushrooms by gently wiping with damp kitchen paper and cut them in half
Put the chillies, coriander (cilantro), cumin, chilli powder, garlic, onion, coconut milk and salt to a food processor and blend until smooth
Heat the vegetable oil in a frying pan or saucepan over a medium to high heat
Add the mushrooms and fry for 5 minutes, stirring often
Add the coconut mix they you made, mix well, bring to a good simmer and simmer for 10 minutes, stirring now and again
Serve hot garnished with the fresh coriander (cilantro)
