Fish With Lemon Grass Curry Recipe

Ingredients

500g (1 lb) boneless fish fillets
4 tablespoons (60ml) vegetable oil
3 large sliced onions
4 crushed cloves garlic
2.5cm (1 inch) cube of fresh ginger root, finely chopped
1 teaspoon (5ml) ground turmeric
1 tablespoon chopped fresh lemon grass
3 tablespoons (45ml) brown vinegar
4 teaspoons (20ml) fish sauce
1/2 cup (125ml) water
2 chopped medium tomatoes
3 tablespoons (45ml) chopped fresh coriander


Method

Wash the fish and cut into strips
Heat oil in large frying pan
Add fish and fry for 5 minutes until fish is firm
Remove fish from frying pan, set aside and keep warm
Add onions and garlic to frying pan and saute until the onion is cooked and soft (10-15 minutes)
Add the ginger, turmeric, lemon grass, vinegar and fish sauce, mix well and saute for 3 minutes
Add the cooked fish and the water, mix well, reduce the heat to a simmer and saute for 5 minutes
Stir in the tomatoes and cook over low heat until mixture is heated through (2-3 minutes)
Serve sprinkled with the fresh coriander
