Chicken and Potato Curry (version 1) Recipe

1 medium onion, peeled and finely chopped
700g (1 1/2 lbs) skinless chicken breasts, cut into 1cm (1/2 inch) pieces
4 large potatoes, peeled and cut into bite-sized pieces
230g (1/2 lb) spinach, washed and coarsely chopped
2 tablespoons (30ml) curry powder
1 tin/can (400g or 14 oz) chopped tomatoes
1 tablespoon (15ml) fresh coriander leaves, finely chopped
1 tablespoon (15ml) washed mint leaves, finely chopped


Heat a large frying pan or saucepan (you need one with a lid) over a medium heat (no oil)
Add the onion, chicken, potatoes, spinach and curry powder, mix well and stir-fry for 3 minutes (this gets very dry so keep stirring so the ingredients do not stick and burn)
Add the chopped tomatoes and 1 1/2 cups (375ml or 13 fl oz) water and mix well
Bring to the boil then reduce the heat to a simmer, cover and simmer for 30 minutes (or until the potatoes and chicken are both cooked). stirring now and again
Add the coriander and mint leaves, mix well and serve immediately
