Yogurt With Cucumbers (Raita) Recipe - Serves 4-6
Ingredients
2 small cucumbers
1/4 teaspoon (1ml) salt
2 teaspoons (10ml) cumin seeds
2 chopped green shallots (or 4 tablespoons chopped onion)
1 1/2 cups (375ml or 2/3 pint) of plain yogurt
1 tablespoon (15ml) lemon juice
Method
Peel the cucumbers, cut them in half and remove the seeds
Chop the cucumbers into small pieces
Sprinkle salt onto cucumber and leave for 15 minutes
Stir cumin seeds in pan over low heat for a few minutes until they go dark
Put half the cucumber into a bowl with the shallots, yoghurt, lemon juice and cumin seeds and mix well
Put the mixture into a serving bowl and sprinkle with the remaining cucumber
Cover and put in fridge until chilled
Serve chilled
