Dry Massaman Beef Curry Recipe

2 tablespoons (30ml) cooking oil
3 medium onions, peeled and thinly sliced
5cm (2 inch) piece of fresh ginger root, peeled and grated
3 cloves of garlic, peeled and crushed
5cm (2 inch) stick of cinnamon
2 tablespoons (30ml) Massaman curry paste (there is a recipe for this on the website or you can buy this ready made)
900g (2 lb) lean beef steak, cut into 1cm (1/2 inch) cubes
125ml (4 fl oz) beef stock
1 tablespoon (15ml) tamarind water (make yourself by dissolving tamarind pulp and a little sugar in water - or buy ready made)
1 teaspoon (5ml) sugar
1/2 teaspoon (2.5ml) salt


Heat the oil in a large frying pan over a medium heat
Add the onions, ginger, garlic and cinnamon and stir-fry until the onion is a golden colour and not browned (about 15 minutes)
Add the curry paste and beef cubes and mix well
Add the beef stock, tamarind water, sugar and salt, mix well, bring to a simmer, cover and simmer for 60 minutes, stirring about every 10 minutes
Serve hot on rice
