Lamb Curry Cooked with Rice Recipe

900g (2 lb) lean lamb, cut into 1cm (1/2 inch) cubes
500ml (17 fl oz) water
4 green cardamom pods, slightly crushed
10 black peppercorns
4 cloves
1 medium onion, peeled and thinly sliced
1/2 teaspoon (2.5ml) salt
1L (35 fl oz) water
450g (1 lb) basmati rice, washed and drained
2 teaspoons (10ml) curry powder
2 cloves of garlic, peeled and crushed
5cm (2 inch) stick of cinnamon


Put the lamb, first 500ml (17 fl oz) of water, cardamom pods, peppercorns, cloves, onion and salt into a large saucepan
Bring the saucepan to the boil, lower the heat a little and boil gently for 10 minutes, stirring a couple of times
Remove the lamb from the saucepan and set aside
Add the last 1L (35 fl oz) of water, basmati rice, curry powder, garlic and cinnamon stick to the liquid in the saucepan and mix well
Bring the saucepan to the boil
Add the lamb to the saucepan, mix well and bring to the boil
Reduce the heat to a gentle simmer, cover and simmer for 20-25 minutes until the rice is cooked, stirring every few minutes
Serve hot
