Beef Madras Curry (version 3) Recipe

400 calories each serving (598 calories if eating with rice)

2 tablespoons (30ml) cooking oil
2 tablespoons (25g or 1 oz) butter
675g (1 1/2 lb) stewing beef, cut into 1cm (1/2 inch) cubes
1 medium onion, peeled and finely chopped
3 green cardamom pods, lightly crushed
2 fresh green chillies, finely chopped
2.5cm (1 inch) piece of fresh ginger root, peeled and grated
2 cloves of garlic, peeled and crushed
1 tablespoon (15ml) Madras curry paste
1 teaspoon (5ml) ground cumin
1 teaspoon (5ml) ground coriander
2/3 cup (150ml or 5 fl oz) beef stock
1 teaspoon (5ml) salt


Heat 1 tablespoon (15ml) of the oil and 1 tablespoon (12.5g or 1/2 oz) of the butter in a large frying pan (you need one with a lid) over a medium heat
Saute the beef cubes for 4-5 minutes until they are browned on all sides and then set the cubes aside
Heat the other tablespoon of the oil and tablespoon of butter in the frying pan over a medium heat
Add the onion and stir-fry for 5 minutes until it is cooked
Add the cardamom pods and stir-fry for 1 minute
Add the chillies, ginger and garlic, mix well and fry for 2 minutes, stirring often
Add the Madras curry paste, ground cumin, ground coriander, the previously browned beef and mix well
Add the beef stock, salt and 1/2 cup (125ml or 4 fl oz) of water, mix well, bring to the boil, reduce the heat, cover and gently simmer for about 90 minutes until the beef is tender, stirring every few minutes (add a little hot water if the curry becomes too dry)
Serve hot on rice
