Beef Madras Curry (version 1) Recipe - Serves 6

Ingredients
680g (1 1/2 lb) lean beef, cut into 1cm (1/2 inch) cubes
1 tablespoon (15ml) lemon juice
2 teaspoons (10ml) salt
1 large onion, peeled and finely chopped
2 cloves of garlic, peeled and crushed
2 dried chillis, finely crushed
4 tablespoons (60ml) cooking oil
5 teaspoons (25ml) ground coriander
1 teaspoon (5ml) ground cumin
1 tablespoon (15ml) ground turmeric
1 teaspoon (5ml) ginger powder
2 teaspoons (10ml) ground black pepper
100g (3.5 oz) tomato paste
1 1/4 cups (300ml or 10 fl oz) beef stock
2 tablespoons (30ml) garam masala
Method
Mix the beef, lemon juice and salt and set aside
Mix the onion, garlic and crushed chillis and set aside
Heat the oil in a large frying pan (you need one with a lid) over a medium heat
Add the onion, garlic and chilli mix and stir-fry for 2 minutes
Add the ground coriander, cumin, turmeric, ginger and black pepper, mix well and stir-fry for 3 minutes, stirring often so that the curry does not stick to the frying pan
Add the seasoned beef cubes, mix well and saute for 10 minutes, stirring often
Add the tomato paste and beef stock, mix well, bring to a simmer, cover and simmer gently for 40 minutes, stirring now and again
Add the garam masala, mix well, cover and cook for 10 minutes, stirring often
If the sauce is runny then remove the lid and keep cooking until the gravy thickens, stirring often
Serve hot on basmati rice
