Almond Fudge (Badaam Barfi) Recipe - Makes about 1KG (2 lb)

Ingredients
300g (10 oz) blanched almonds (or ground almonds)
500ml (17 fl oz) full milk
170g (6 oz) sugar
55g (2 oz) butter
Method
If you bought whole almonds then put the almonds into a food processor and process into a fine powder
Grease a 20cm (8 inches) square baking tray
Pour the milk into a large non-stick saucepan, bring to the boil and boil over a high heat for 10-15 minutes, stirring all the time, until the milk thickens like a creamy soup (be careful and make sure that the milk does not boil over)
Reduce the heat to medium
Add the sugar and stir until it is dissolved then simmer/lightly boil for 2 minutes
Melt the butter in a small saucepan whilst the sugar and milk mixture is cooking
Add the almond powder and butter, mix well and cook for 3 minutes, stirring as fast as you can and keep removing the fudge from the spoon with a knife
Keep cooking for a little while if the consistency is not like a fudge
Pour the fudge into the baking tray and smooth with a knife
Let the fudge cool a little and then cut into bite-sized pieces
Allow the fudge to cool and store in an airtight container until needed
