Onion, Mango and Peanut Chaat Recipe - Serves 4
Ingredients
2 teaspoons (10ml) ground cumin
1/2 teaspoon (2.5ml) cayenne pepper
1 teaspoon (5ml) mango powder
1/2 teaspoon (2.5ml) garam masala
1 pinch asafoetida
1/2 teaspoon (2.5ml) salt
1/2 teaspoon (2.5ml) ground black pepper
1 tablespoon (15ml) peanut oil
90g (3 1/2 oz) unsalted peanuts
1 medium onion, peeled and finely chopped
1/2 cucumber, with the seeds removed and finely chopped
1 mango, peeled with the seed removed and finely chopped
1 green chilli with the seeds removed and finely chopped
2 tablespoons (30ml) finely chopped fresh coriander
1 tablespoon (15ml) finely chopped fresh mint
1 tablespoon (15ml) lime juice
1 pinch raw/brown sugar
Method
Put the ground cumin, cayenne pepper, mango powder, garam masala, asafoetida, salt and black pepper into a bowl and mix well to make the chaat masala
Set aside the chaat masala
Heat the oil over a medium heat
Stir-fry the peanuts in the oil for about 5 minutes until they are lightly browned - do not let the peanuts overcook and become dark brown
Remove the peanuts and put onto kitchen paper to drain the excess oil and let cool
Add the onion, cucumber, mango, chilli, coriander and mint to a medium bowl and mix well
Sprinkle 1 teaspoon (5ml) of the chaat masala over the mixture in the bowl
Add the peanuts to the bowl and mix well
Add the lime juice and sugar and mix well
Put the mixture into a serving bowl and sprinkle another teaspoon (5ml) of the chaat masala over the top and then serve
Keep the remaining chaat masala in an airtight jar until needed
