Beef Penang Curry Recipe

2 tablespoons (30ml) vegetable oil
2 tablespoons penang curry paste (there is a recipe on this site or buy ready made)
700g (1 1/2 lb) lean beef steak, cut into thin strips
3/4 cup (185ml or 6 fl oz) coconut milk
1 tablespoon (15ml) fish sauce
1 tablespoon palm sugar (jaggery)
3 tablespoons tamarind paste
2 kaffir lime leaves, finely sliced
1/2 long red chilli, with vein and seeds removed and finely sliced


Heat the oil in a large frying pan over a medium to high heat
Stir-fry the curry paste for 2 minutes
Add the beef strips and stir-fry for 5 minutes
Add all but about 3 tablespoons of the coconut milk along with the fish sauce, palm sugar and tamarind puree and mix well
Reduce the heat so that the curry is simmering and simmer for 5 minutes, stirring frequently
Put the curry into a serving dish and garnish with the remainder of the coconut milk, along with the lime leaves and chilli slices
Serve hot
