Curried Beef Sausages Recipe - Serves 4-6

Ingredients
1kg (2 lb) beef sausages
2 tablespoons (30ml) vinegar
1 teaspoon (5ml) salt
2 1/2 cups (625ml or 1 1/2 pints) water
1 beef stock cube
4 tablespoons (60g or 2 oz) butter
2 medium onions, peeled and finely chopped
1 small apple, peeled, cored and finely chopped
1 tablespoon (15ml) curry powder
1 tablespoon (15ml) cornflour
1 tablespoon (15ml) water for the cornflour
Method
Prick the sausages and put them in a large saucepan with enough water to cover
Add the vinegar and the salt, cover and bring to boil
Reduce the heat, cover and simmer for 10 minutes
Drain the sausages and allow them to cool
Remove the sausage skins and set aside
Heat the 2 1/2 cups of water, crumble in the stock cube and stir until the stock cube is fully dissolved
Melt the butter in a large frying pan over a medium to high heat
Add the onion, apple and curry powder and stir-fry for 8 minutes
Add the 2 1/2 cups of stock cube water and bring to the boil, stirring now and again
Add the sausages, reduce the heat, cover and simmer for 10 minutes, stirring now and again
Make a paste with the cornflour and the tablespoon of water and stir into the sausage curry - increase the heat and keep stirring as the mixture boils and thickens
Serve hot
