Cumin Chicken Curry Recipe

Ingredients

2 chicken breasts with skin removed, cut into 1cm (1/2 inch) cubes
2 teaspoons (10ml) lemon juice
1 tablespoon (15ml) plain yogurt
1 teaspoon (5ml) ground cumin
1/4 teaspoon (1ml) ground coriander
1/4 teaspoon (1ml) chilli powder
2 tablespoons (30ml) vegetable oil
1 medium onion, peeled and finely chopped
1 garlic clove, peeled and crushed (or very finely chopped)


Method

Mix the chicken, lemon juice, yogurt, cumin, coriander and chilli powder in a medium bowl
Cover with kitchen film and put in the fridge for 30 minutes
Heat the oil in a frying pan over a medium heat
Add the onion and garlic and fry for 8 minutes until the onion is cooked, stirring often
Add the chicken and spices from the bowl and saute for 10 minutes, turning every minute (add a little hot water if the curry gets too dry)
Make sure the chicken is properly cooked and serve on rice
