Spicy Scrambled Eggs Recipe - Serves 2

Ingredients
4 eggs
2 tablespoons (30ml) milk
1/8 teaspoon (0.5ml) salt
Large knob of butter
1 small onion, peeled and finely chopped
2 green chillis with seeds removed and finely chopped
1 medium tomato, finely chopped
1 tablespoon fresh coriander, finely chopped
Method
Break the eggs into a medium bowl
Add the milk and salt and whisk with a fork for 20 seconds
Heat the butter in a small saucepan over a medium heat
Add the onion and chillis to the saucepan and stir-fry for 3 minutes
Add the tomato and stir-fry for 2 minutes
Add the eggs and coriander to the saucepan and stir all of the time until the mixture has thickened and is fluffy
Serve hot on toast
