Minced (Ground) Lamb with Peas Curry Recipe

Ingredients

3 tablespoons (45ml) vegetable oil
1 medium onion, peeled and chopped
2 garlic cloves, peeled and crushed
2.5 cm (1 inch) fresh ginger root, peeled and finely chopped
2 green chillies, finely chopped
675g (1 1/2 lb) minced (ground) lamb
1 teaspoon (5ml) ground cumin
1 teaspoon (5ml) ground coriander
1 teaspoon (5ml) chilli powder
1 teaspoon (5ml) salt
300ml (11 fl oz or 1 1/4 cups) water
175g (1 1/2 cups or 6 oz) frozen peas, thawed
2 tablespoons (30ml) lemon juice


Method

Heat the oil in a large frying pan (you need one with a lid) over a medium heat
Fry the onion until lightly browned (7-10 minutes)
Add the garlic, ginger and chillies and stir-fry for 3 minutes
Add the lamb mince, turn the heat up to high and stir-fry for 5 minutes
Add the cumin, coriander, chilli powder, salt and water and mix well
Reduce the heat, cover and simmer for 25 minutes, stirring every few minutes
Add the peas and lemon juice and cook, uncovered, for 10 minutes, stirring regularly
Serve hot (warm naan bread and natural yogurt go well with this dish)
