Tamarind Sambal Recipe - Makes 1/2 cup (125ml or 4 fl oz)

Ingredients
1 tablespoon tamarind concentrate
2 tablespoons (30ml) water
1 teaspoon (5ml) ground cumin
1/2 teaspoon (2.5ml) chilli powder
1/2 teaspoon (2.5ml) ground fennel
30g (1 oz) jaggery (or gur) - substitute brown sugar if you can't get jaggery or gur
5cm (2 inches) fresh ginger root, peeled and grated
1 tablespoon (15ml) lemon juice
Method
Mix the tamarind concentrate and water in a small bowl until the tamarind has dissolved
Add the cumin, chilli powder and fennel and mix well
Add the jaggery, ginger and lemon juice and stir until the jaggery is dissolved
