Chicken Tikka Curry Recipe

Ingredients

500g (1 lb) boneless and skinless chicken breasts, cut into bite-sized cubes
2.5cm (1 inch) cube fresh ginger, peeled and grated
3 cloves of garlic, peeled and crushed
1 teaspoon (5ml) chilli powder
1/4 teaspoon (1ml) turmeric powder
2/3 cup (150ml or 5 fl oz) plain yogurt
4 tablespoons (60ml) lemon juice
1 tablespoon (15ml) finely chopped fresh coriander leaves


Method

Add the chicken, ginger, garlic, chilli powder, turmeric powder, yogurt, lemon juice and fresh coriander to a large bowl and mix well
Cover the bowl with film and put in the fridge for at least 2 hours
Line a flameproof dish with foil
Put the chicken and juices onto the foil
Heat the grill (broiler) to 200C (400F)
Grill (broil) the chicken for about 20-25 minutes until it is cooked, turning every 5 minutes
Serve hot
