Easy Chicken Curry (version 1) Recipe

2 tablespoons (30ml) vegetable oil
500g (1 lb 10 oz) boneless and skinless chicken breast, cut into bite-sized cubes
1 garlic clove, finely crushed
2.5cm (1 inch) fresh ginger root, peeled and grated
2 teaspoons (10ml) garam masala
1 teaspoon (5ml) ground cumin
300ml (11 fl oz) cream
1/2 teaspoon (2.5ml) chilli powder
1/4 cup (60ml or 2 fl oz) tomato paste
1/2 teaspoon (2.5ml) salt
1 tablespoon chopped fresh coriander leaves


Heat the oil in a frying pan over a moderate heat and then add the chicken
Stir-fry the chicken for 5 minutes until it is sealed
Remove the chicken once it is sealed and set aside
Add the garlic, ginger, garam masala and cumin and cook for 1 minute, stirring continuously
Add the cream, chilli powder, tomato paste and salt and mix well
Bring to just under the boil and turn the heat down and simmer for 5 minutes, stirring now and again
Add the chicken and simmer for 20 minutes, stirring now and again
Serve on rice garnished with the fresh coriander
