Lime Pickle Recipe - Makes about 900ml (30 fl oz)

Ingredients
6 limes
2 tablespoons (30ml) salt
2 teaspoons (10ml) chilli powder
1 tablespoon (15ml) garam masala
2 tablespoons (30ml) sugar
6 garlic cloves, peeled and crushed
1/2 cup (125ml or 4 fl oz) vegetable oil
3 large onions, peeled and finely chopped
2 cups (500ml or 17 fl oz) malt vinegar
Method
Cut open the limes and discard the seeds
Chop the whole limes up into small pieces
Put the chopped limes into a large bowl
Mix the salt, chilli powder, garam masala, sugar and garlic together in a small bowl
Add the mixture to the limes and mix well
Cover the bowl with clear wrap and leave overnight in the fridge
Heat the oil in a large saucepan (you need one with a lid) over a medium to high heat
Add the onions and saute for 10-12 minutes until they are soft and golden but before they turn brown, turning often
Stir in the limes - make sure you get all of the juices and spices out of the bowl and into the saucepan
Reduce the heat to medium and cook for 15 minutes, stirring continuously (if you do not keep stirring then the ingredients will most likely stick and burn)
Add the vinegar, mix well and bring to the boil
Turn the heat down to a gentle simmer
Cover the saucepan and simmer for an hour, stirring often
Remove from heat and allow to cool
Put the lime pickle into clean jars and seal
Leave for at least 3 weeks before use
