Quick Beef Curry Recipe

3 tablespoons (45ml) cooking oil
500g (1 lb) rump beef steak, cut into 2.5cm (1 inch) cubes
1 large onion, peeled and finely chopped
1 clove of garlic, peeled and crushed
3 teaspoons (15ml) curry powder
1 teaspoon (5ml) chilli powder
500ml (17 fl oz or 2 cups) boiling water
1 tablespoon (15ml) tomato puree
3 tablespoons (45ml) lemon juice (this is the juice from one lemon)


Heat the oil in a large frying pan or saucepan over a medium heat
Fry the beef, onion and garlic for 5 minutes until the beef is sealed, stirring often
Add the curry and chilli powder, mix well and cook for 3 minutes, stirring all the time
Cover all the contents of the frying pan (or saucepan) with the boiling water (add more water if the contents are not covered)
Add the tomato puree and lemon juice and mix well
Bring it all to the boil, reduce the heat and allow the curry to simmer
Continue to cook for 90 minutes, stirring now and again
Serve hot with rice
