A Chicken and Vegetable Curry Recipe Test
Another weekend. Another curry.
I flicked my way through the untested Curry Focus website curry recipes looking for another curry recipe to try out. And yet another chicken curry recipe caught my attention. It was a chicken and vegetable curry recipe. Lots of vegetables. Nice.
Finding the ingredients was no problem during my regular Saturday shop and the only items that I needed to buy were the chicken, cauliflower and mushrooms.
Everything else was already lurking in my kitchen cupboard.
Making the Chicken and Vegetable Curry
There are no complicated steps needed to make this curry. I was a bit amazed at the big piles of prepared ingredients. The mountain of mushroom slices was very impressive and I was a bit nervous about how big this curry was and whether all of the ingredients would fit into my biggest saucepan. But I was reminded fairly soon about how much mushrooms shrink when they are cooked (thank goodness).
So my big saucepan did cope with the amount of ingredients (just). This is a really big curry.
Tasting and Rating the Chicken and Vegetable Curry
The usual tasting team arrived in plenty of time and were soon sitting down to a tasty meal of Chicken and Vegetable Curry on basmati rice.
And the curry was great. The chicken was well cooked and the cauliflower was cooked but nicely crunchy. The curry had a lovely taste and there was a smorgasbord of colours on the plates. The curry was very filling and received a taste score of 8.5 out of 10 with a spice/heat rating of “Hot”.
A truly excellent curry.
Make the Chicken and Vegetable Curry Again?
I will definitely have this curry on the list of curry recipes to use again. The recipe produced a huge curry and there were easily 8 servings to enjoy.
It was pointed out that this curry could easily be turned into a vegetarian curry by replacing the chicken with potatoes. I might try this sometime in the future.
