I’ve had a few meat curries over the last few weeks and a vegetarian curry is long overdue. There are a lot of vegetarian curry recipes on the Curry Focus website for everyone to enjoy. And I spotted an easy Saag Aloo curry recipe that I have not tested yet. Spinach (saag) and potato (aloo) all in the same curry – what a great combination.
I quickly worked out that all I needed to get for the curry was the spinach as I already had everything else. So I bought the spinach during my Saturday shopping trip. A very easy curry shop.
Sunday afternoon found me preparing the ingredients and I made the onion paste while the potatoes were parboiling. I was doing two things at once which is miraculous for me because I sometimes struggle with doing one thing at once.
The cooking time for the curry was only around 40 minutes and I started the evening curry cooking process whilst clasping, and drinking, a nice big gin and tonic – this is my favourite cooking aid.
And the curry making was as easy as the recipe made it look. When the potato was cooked I increased the heat to high and within a couple of minutes the liquid had evaporated.
I served up the Saag Aloo (Spinach and Potato) curry on basmati to the recently arrived tasting team.
And everyone agreed that the curry was great. The potato was well cooked and had absorbed the flavours of the curry. The curry was surprisingly spicy hot (well I was surprised) and this delicious curry received a high taste score of 8.5 out of 10 with a spice/heat rating of “Hot”.
I think that this would make a great side dish as well as a great curry and I will definitely be making this curry again.
