It has been 7 years since I started this journey of testing the great range of Curry Focus recipes and I never get fed up with the task. It’s hardly a task really – it’s more a labour of love. I try and test one recipe a week. It isn’t always possible for me to try a recipe every week, but I do my best.
This week I wanted a nice, simple, curry recipe that was sure to be a winner. So I looked through the untested recipes and found a Coconut Chicken Curry recipe among the chicken curry recipes that looked like it fitted the bill.
I picked up the ingredients that I needed while out shopping on Saturday. Chicken thighs. The best chicken meat.
Sunday afternoon saw me doing the usual ingredient preparation with onions, garlic and ginger to peel and get ready as well as cutting up the meat. And an extra bonus is peeling and cutting up a couple of potatoes. A curry with potato is a wonderful meal. I measured out the spices and opened the tins before relaxing for 10 minutes.
The cooking time for the curry is about 40 minutes and I started the cooking so that the curry would be ready by the planned eating time of 7pm.
And everything went pretty much as expected. The Curry focus tasting crew arrived about 10 minutes before the curry was ready and it wasn’t too long before I was serving up the Coconut Chicken Curry on basmati rice.
And the curry was great. There was lots of sloppy coconut sauce and everything was cooked really well. Even the potato pieces were fully cooked. Everyone enjoyed this delicious curry which received a taste score of 8.5 out of 10 with a spice/heat rating of “Hot”.
And this is a big curry. Plenty of food to serve 6. Another hit.
