Another weekend has rolled around and so it is time to try out another great Curry Focus recipe.
I’ve been reading a little about the Paleo diet lately. Basically, you eat the same types of food that people ate in the Paleolithic period (a 2.5 million year period that ended about 10,000 years ago). The Paleo diet has been around for a few years but has passed me by. I found out about the diet when doing the research into adding calorie details onto the Curry Focus website.
So this weekend I’m going to follow the Paleo Chicken Curry with Cauliflower Rice recipe.
Although there are more ingredients than usual in the recipe, the recipe itself is pretty easy to follow.
I made sure that I had prepared all of the ingredients before starting to cook as the recipe gets you cooking 2 things at the same time. I also spotted that I would need to keep the cooked cauliflower rice warm so turned on the oven to a low 150C (300F).
The actual cooking time for the curry is 35 to 40 minutes.
And the cooking went pretty much without incident. There was a lot of coconut milk at the beginning and a lot of it disappeared during the cooking.
I needed to prod the cauliflower in the food processor when turning the cooked cauliflower into rice and I made sure that the power was turned off when I was poking at the cauliflower with a spoon.
Almost bang on schedule, I served up the Paleo Chicken Curry on a bed of Cauliflower Rice to the newly arrived tasting crew.
And it was good. The chicken was well cooked and the cauliflower rice was a tasty change from the usual basmati rice that I serve. The sauce was still a bit sloppy but not overly so. This was a lovely meal and everyone thought that the cauliflower rice was great. The curry received an average taste score of 8 out of 10 with a spice/heat level of “Medium”.
I’m not sure where Paleolithic people would have bought their spices but their food is not bad at all. A healthy and tasty curry.
